Cheesy Herb Butter Grilled Corn

1. Wash hands with soap and water.

2. Rinse fresh produce.

3. In a medium bowl using an electric mixer on medium speed, whip butter until smooth. Add cheese, herbs, garlic powder and salt and pepper to taste and mix well. Transfer mixture to a piece of plastic wrap and roll up into a log; twist ends to secure and place in the refrigerator for 1 hour or until firm.

4. Peel the husks of the corn back to remove the silk, but don’t fully remove the husks. Wrap corn back up in husks and place into a bowl of cold water for 20 minutes.

5. Coat grill grate with cooking spray and preheat on medium-low.

6. Remove corn from water and pat the outside of the husks dry. Open up husks and add 2 to 3 pats of herb butter; wrap back up and place on grill. Grill for 15 minutes.

7. Melt remaining herb butter in the microwave. Remove top part of husk and baste with melted butter. Continue to grill for 5 minutes or until corn is tender, turning corn upside down during last 2 minutes of grilling to get nice grill marks.
