Cheddar Chive Buttermilk Biscuits Seafood Supper C

2: Wash hands with soap and water. Rinse fresh produce under cold running water.
3: Place a nonstick baking mat or parchment paper on a cookie pan.
4: In a small bowl whisk together egg with buttermilk.
5: In a separate large bowl combine flour, baking powder, baking soda, sugar and salt.
6: Work diced butter into dry ingredients until it is a crumb consistency using your hands, a pastry blender or pulse in a food processor.
7: Add cheese and chives to flour mixture and mix.
8: Add the egg mixture to the dry ingredients and mix slowly with clean hands until combined. Do not overmix.
9: Dollop large spoonfuls of batter onto baking pan, about 2 ½ inches wide and tall.
10: Keep spaced 2 inches apart, use 2 pans if necessary. Wash hands after handling raw batter.
11: Bake for 12-14 minutes. Allow to cool on wire rack for 5 minutes before devouring.
