- Wash hands with soap and water.
- Rinse fresh produce.
- In a small bowl, whisk together oil, vinegar, lemon juice, garlic, shallots, salt and pepper to taste; set aside.
- In a large bowl, combine spinach, cauliflower, beets and garbanzo beans. Add half the dressing and toss to coat well.
- Top salad with cabbage and serve remaining dressing on the side.
