Preparation


1. Bring a large pot of lightly salted water to a boil. Add pasta, cook for about 10 minutes or until al dente. Drain and set aside.
2. Melt butter in a medium skillet over medium heat. Stir in shallots, garlic, and green onion. Season with Cajun seasoning and pepper. Add shrimp and cook about 2 minutes. Add wine and tomatoes and cook over medium heat or until wine is reduced and shrimp are opaque.
3. Mix in cooked pasta and spinach. When spinach is wilted, add a splash of cream, heat through and serve.
