Breakfast Casserole Cups

Recipe by:




1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Preheat oven to 350 degrees Fahrenheit.

4. In a medium bowl, beat together eggs, milk, parsley, dry mustard and salt and pepper to taste; set aside. Wash hands after handling raw eggs.

5. Coat 4 ramekins with cooking spray; evenly divide bread cubes between the ramekins. Top each evenly with ham, tomato and green onion. Pour egg mixture over top. Place ramekins on a large baking sheet and cook for 35 minutes or until knife inserted near center comes out clean.

6. Add a slice of cheese to each during last 3 minutes of cook time. Remove from oven and let stand for 10 minutes before serving.
