1. In a blender, combine 1 cup frozen peaches and 1½ cups freshly squeezed regular or blood orange juice; blend on high speed for 2 minutes or until smooth.
2. Place 3 to 4 tablespoons purée into each glass, fill with a small amount of dry sparkling wine or champagne; stir to loosen purée.
3. Continue to add sparkling wine or champagne until glasses are full.
