Recipe by:



1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Preheat oven to 400 degrees Fahrenheit. Line 16 muffin tin cups with paper liners. Lightly coat with cooking spray.

4. Place oats in a food processor and pulse until finely chopped; place in a large bowl. Add milk and soak for 30 minutes.

5. In a medium bowl, combine brown sugar, applesauce, honey, egg whites, oil and vanilla; mix well. Add to oat mixture and mix well. Wash hands after handing raw eggs.

6. In another medium bowl, combine flour, baking powder, baking soda and salt; mix well. Add to oat mixture and mix until just incorporated. Fold in blackberries. Wash hands after handling raw flour.

7. Spoon into muffin tin and bake for 22 minutes. Transfer to baking rack and let cool.
