1: Wash hands with soap and water.
2: Rinse all fresh produce items under cold running water prior to prepping.
3: Coat a large pan with cooking spray and place over medium heat. Add garlic and sauté for 2 minutes. Stir in black beans, green onion, corn, cumin, chili powder, salsa and rice. Reduce heat and simmer, uncovered, for 5 minutes, stirring occasionally. Remove from heat and stir in parsley.
4: Preheat oven to 300 degrees Fahrenheit.
5: Divide rice and bean mixture between the tortillas and roll up; place in a glass baking dish that has been lightly coated with cooking spray. Bake for 10 minutes or until heated through. Serve with sour cream if desired.
