Baked Pumpkin Spice Donuts w/Coffee Glaze

1. Wash hands with soap and water.
2. Preheat oven to 350 degrees Fahrenheit and lightly grease two donut pans with no-stick cooking spray. In a mixing bowl whisk together oil, eggs, pumpkin puree, sugar, ½ teaspoon salt, cinnamon, nutmeg and ginger. Wash hands with soap and water after handling raw eggs. Sift in baking powder and flour and mix until well combined. Spoon 1/4 cup of the mixture into each donut well. Bake for 16-18 minutes or until the bottoms are lightly browned and a toothpick comes out clean when entered into the donut’s center. Allow the donuts to cool completely. Meanwhile, make the glaze by stirring together confectioners’ sugar, strongly brewed coffee and remaining ¼ teaspoon salt. Store at room temperature until the donuts are cool enough to glaze.
3. Dip each donut into the glaze, sprinkle with a little more nutmeg and enjoy.
