Baked Cheddar Gratin with Fresh Thyme

Give your cheesy potatoes a sophisticated update when you combine layers of thinly sliced potatoes, Kerrygold Cheddar Slices, fragrant garlic and fresh thyme. Recipe provided by Kerrygold USA. For more inspiration, go to:

1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Preheat oven to 400 degrees Fahrenheit. Spray an oval baking dish lightly with cooking spray and set aside.

4. Peel potatoes, cut into 1/8-inch thin slices and place in a large bowl.

5. Heat cream, thyme and garlic over low heat until warm but not boiling and pour over potatoes. Season with salt and pepper. Stir gently to coat.

6. Spoon a third of the potato and cream mixture into prepared dish and arrange so potatoes are evenly distributed.

7. Add 2 slices of Kerrygold Mild Cheddar. Repeat process two more times, finishing with cheese. Pour extra cream left in bowl over top.

8. Using a spatula, press down to compact layers.

9. Cover with foil and bake for 30 minutes, remove foil and bake for an additional 30 minutes.

10. Remove from oven, garnish with fresh thyme and let sit for 5 minutes before serving.
