Bacon-Wrapped Pork Medallions

Note: Wash hands with soap and water. In a small bowl, combine dressing, chili pepper, garlic powder and salt and pepper to taste.
1. Place pork pieces in a large shallow baking dish, pour dressing mixture over top and flip to coat; cover and marinate in the refrigerator for 1 to 2 hours. Wash hands after handling raw pork.
2. If needed, coat grill grate with cooking spray and preheat to medium.
3. Remove pork pieces from marinade and place on a baking sheet; discard marinade. Portion pork pieces into 8 servings, forming into medallion shapes; wrap each medallion with a slice of bacon and secure with wooden or bamboo skewers.
4. Place on grill for 5 to 7 minutes per side or until cooked through and internal temperature reaches 145 degrees Fahrenheit. Let rest for 3 minutes before serving.
