1: Preheat oven to 375 degrees Fahrenheit; spray 13 x 9-inch baking dish with cooking spray.
2: Wash hands with soap and water.
3: In a medium saucepan, cook bacon over medium-high heat 8 minutes or until crisp, stirring occasionally; transfer to paper towel-lined plate. Break into crumbles once cooled.
4: In same saucepan with drippings, cook celery and onion 5 minutes or until tender, stirring occasionally. Add broth and mustard; heat to a boil. Remove from heat; gently stir in stuffing and bacon. Transfer stuffing mixture to prepared dish.
5: In a food processor, pulse cookies, pretzels and butter until small crumbs form; sprinkle over stuffing mixture. Bake stuffing 35 minutes or until heated through and topping is golden brown; garnish with parsley, if desired.
