Directions
- Wash hands with soap and water.
- Rinse all fresh produce items under cold running water prior to prepping.
- Using a blender, combine olive oil, lemon juice, lemon zest, mustard, honey, garlic, basil, salt and pepper. Blend for 1 minute or until well combined; set aside.
- In a large serving bowl, combine spring mix, tomatoes, peppers, onion, olives and feta. Add half the dressing and toss to coat well.
- Serve salad with remaining dressing on the side.
