Directions

1. Wash hands with soap and water.
2. Rinse all fresh produce items under cold running water prior to prepping.
3. In a small bowl, combine vinegar, tarragon, honey, mustard and salt and pepper; mix well. Slowly whisk in oil until consistency is smooth.
4. In a large salad bowl, combine greens, onion, pears and a quarter of the dressing; toss well. Serve topped with Gorgonzola if desired and serve with remaining dressing.
