Apple Cinnamon Stuffed French Toast
DirectionsNote: Wash hands with soap and water.
1. In a large skillet over medium heat, add butter. Once melted, add apples, brown sugar, cinnamon and nutmeg and cook for 10 minutes or until apples are softened; set aside.
2. Cut a horizontal slit through the top of each bread slice to form a pocket. Stuff 3 tablespoons apple filling into each pocket.
3. In a shallow dish, whisk together cream, vanilla and egg. Carefully dip each stuffed bread into egg mixture, coating it well; let excess egg mixture drip off. Add to a large skillet that has been coated with cooking spray. Over medium heat, cook for 4 minutes per side or until golden brown. Repeat with remaining bread slices.
4. Serve dusted with powdered sugar if desired.
