This lightened up version of classic Alfredo is delicious served over your favorite pasta.

1. Wash hands with soap and water.

2. In a medium saucepan over medium-high heat, melt butter. Whisk in flour and continue stirring until mixture is smooth and just starts to brown, about 2 minutes.

3. Slowly whisk in milk, a little at a time, until fully incorporated. Lower heat to medium and continue cooking until mixture starts to thicken, about 5 minutes.

4. Whisk in Parmigiano-Reggiano until sauce is smooth and season to taste with a pinch of nutmeg, salt and pepper.

5. Serve with your favorite pasta and enjoy.
