14 oz. Carla’s Pasta gluten free penne pasta

5 Tbsp. Big Y butter, divided

1 Tbsp. olive oil

3 garlic cloves, minced

¼ cup leeks, diced

1 lb. Naked farm-raised jumbo raw shrimp, peeled and deveined

2 cups variety of grape tomatoes, cut in half

½ tsp. cayenne pepper

-sea salt to taste

2 tsp. fresh lemon juice

-2 Tbsp. fresh parsley, chopped (optional)

1 lemon (optional)


1. Cook pasta according to package directions to al dente; set aside and keep warm. 2. In a large skillet over medium heat, combine 3 tablespoons butter and oil. Once butter is melted, add garlic and leeks and cook for 3-4 minutes or until softened; 3. Add shrimp and cook for 1-2 minutes or until just pink. Add tomatoes, cayenne pepper and salt to taste and cook for 1 minute. 4. Add pasta, remaining butter and lemon juice and cook for 3 minutes or until shrimp is cooked through and pasta is heated through. 5. Serve garnished with parsley and a squeeze of lemon if desired.
