Add All Ingredients

1 cup Big Y buttermilk

1 Big Y large white egg, lightly beaten

4 chicken breasts, pounded and cut in half

1½ cups plain Panko crumbs

1 cup Big Y all-purpose flour

3 tsp. poultry seasoning

2 tsp. paprika

2 tsp. garlic powder

1 tsp. onion powder

-sea salt and white pepper to taste

-Big Y vegetable oil for frying

2 cups baking mix

11/3 cups Big Y milk

2 Tbsp. Big Y vegetable oil

1 Big Y large white egg

¾ cup shredded sharp cheddar cheese

¼ cup scallions, minced

1 cup Blue Heron Farm pure maple syrup

3 Tbsp. Big Y butter, melted

2½ tsp. hot sauce


1. In a shallow dish, whisk together buttermilk and egg. Add chicken breasts and refrigerate for 1 hour. 2. In another shallow dish, combine Panko crumbs, flour and seasonings; season to taste with salt and pepper. 3. In a 12-inch cast iron skillet or Dutch oven, add 1 inch of oil; heat oil to 325°F. 4. Remove chicken from buttermilk mixture and coat in Panko mixture. 5. Carefully place 2-3 pieces chicken in hot oil and fry, turning with tongs every 1–2 minutes and adjusting heat to maintain a steady temperature of 300°F–325°F, for 12 minutes or until skin is deep golden brown. 6. Remove chicken with a slotted spoon and place on a paper towel-lined plate and let drain. Repeat with remaining chicken pieces. 7. Heat a waffle iron to medium heat. 8. In a large bowl, whisk together baking mix, milk, vegetable oil and egg; fold in cheese and scallions. 9. Fill waffle iron with batter, close lid and cook according to manufacturer’s directions. 10. In a small bowl, combine maple syrup, butter and hot sauce. 11. Serve chicken on waffles topped with spicy syrup.
