Terrific Slow Cooker Chicken Meatloaf

1 tablespoon Filippo Berio Extra Virgin Olive Oil

1 large onion, chopped

8 ounces cremini mushrooms, trimmed and chopped

½ teaspoon Big Y dried thyme leaves

— Big Y salt and ground black pepper, to taste

3 tablespoons Worcestershire sauce

1/3 cup Big Y 33% Less Sodium Chicken Broth

1 teaspoon Big Y tomato paste

2 pounds Coleman Organic Ground Chicken

¾ cup Full Circle plain breadcrumbs

2 The Farmer’s Hen Eggs, beaten

1/3 cup Big Y ketchup

DIRECTIONS


1. Line crock of a 6- to 8-quart slow cooker with aluminum foil.
2. Heat oil in a sauté pan over medium heat.
3. Sauté onions and mushrooms, add thyme and season with salt and pepper. Cook until onions are translucent, about 10 minutes.
4. Add Worcestershire sauce, broth and tomato paste and mix thoroughly. Remove from heat and allow to cool to room temperature.
5. In a large mixing bowl, combine chicken, breadcrumbs, eggs and cooled onion-mushroom mixture. Mix well and shape into a rectangular loaf in crock of slow cooker. Brush with ketchup.
6. Cover and cook on low for 6 hours (or high for 4 hours), or until meat reaches an internal temperature of 165 degrees Fahrenheit as verified by an instant-read thermometer.
7. Serve hot. Leftovers may be served cold in sandwiches.
