Terrific Slow Cooker Chicken Meatloaf

What’s not to love about comfort food from a slow cooker? This recipe, based on the American Institute for Cancer Research’s Terrific Meatloaf recipe, is the perfect addition to your fall home cooking lineup. Directions

1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Line crock of a 6- to 8-quart slow cooker with aluminum foil.

4. Heat oil in a saute pan over medium heat.

5. Add onions, mushrooms, thyme, and salt and pepper to taste. Saute until onions are translucent, about 10 minutes.

6. Add Worcestershire sauce, broth and tomato paste and mix thoroughly. Remove from heat and allow to cool to room temperature.

7. In a large mixing bowl, combine chicken, breadcrumbs, eggs and cooled onion-mushroom mixture.

8. Mix well and shape into a rectangular loaf in crock of slow cooker. Wash hands after handling raw chicken. Brush with ketchup.

9. Cover and cook on low until meat reaches an internal temperature of 165 degrees Fahrenheit, about 6 hours (or high for 4 hours).

10. Serve hot. Leftovers may be served cold in sandwiches.
