1. Wash hands with soap and water.

2. Rinse fresh produce.

3. In a small bowl, whisk together oil, vinegar, garlic, herbs, salt and pepper. Place 4 tablespoons in a large resealable plastic bag; reserve remaining mixture. Add vegetables, except tomatoes, seal bag and turn to coat. Let marinate for 1 hour at room temperature.

4. Preheat grill to medium.

5. Transfer vegetables, except tomatoes, to a grill basket or thread onto skewers. Grill vegetables, covered, turning occasionally, until tender, about 10 minutes.

6. Add tomatoes to grill during last 4 minutes of cook time.

7. Place vegetables on a large serving plate, drizzle with reserved oil mixture and serve.
