Add All Ingredients

1 1/2 lb. (16-20) extra jumbo easy peel raw shrimp

- nonstick cooking spray

2 egg whites

1/4 cup Big Y cornstarch

1/2 tsp. Big Y ground cinnamon

1/2 tsp. ground anise

1/4-1/2 tsp. ground cloves

1/2 tsp. ground fennel seed

-Big Y salt and white pepper to taste

1 cup Big Y sweetened flaked coconut

1 cup panko bread crumbs

1 tsp. Big Y paprika


Preheat oven to 425°F. Peel and devein shrimp, leaving tails on if desired. Place a wire rack coated with cooking spray in a 15x10-inch jelly roll pan. In a shallow dish, whisk egg whites just until foamy. In another shallow dish, combine cornstarch, cinnamon, anise, cloves, fennel seed, salt and pepper. In a third shallow dish, combine coconut, bread crumbs and paprika. Dredge shrimp, 1 at a time, in cornstarch mixture. Dip in egg whites then dredge in coconut mixture, pressing gently with fingers; place on the prepared wire rack. Continue until all the shrimp have been coated. Bake for 10 to 12 minutes or just until shrimp turn pink, turning once after 8 minutes.
