Apple Pancakes with Apple Cider Syrup

Breakfast for dinner is a great weeknight treat! Not only is it quick and hearty, you know it will be a guaranteed hit with the whole family. These pancakes are fluffy and delicious and are perfectly topped with yummy homemade apple syrup. Recipe featured in the Living Well Eating Smart newsletter (dated 11/21/13-1/15/14).

Ingredients

Directions

1. Wash hands with soap and water.

2. Rinse fresh produce.

3. In a large bowl, combine flour, sugar, cinnamon, baking soda and salt. Mix well and set aside.

4. In a medium bowl, stir together buttermilk, grated apple, eggs and oil.

5. Add buttermilk mixture to flour mixture. Stir together until well combined, about 1 minute. Wash hands after handling raw flour and egg.

6. In a 2-quart saucepan, combine remaining ingredients except buttery spread.

7. Over medium heat, bring to a boil while stirring constantly.

8. Continue cooking for about 6 to 8 minutes while stirring occasionally until cider has slightly thickened.

9. Remove syrup from heat and stir in buttery spread until melted.

10. Meanwhile, on a preheated nonstick skillet or griddle, place about 1/4-cup pancake mixture for each pancake. Heat on first side until golden brown, about 2 to 3 minutes.

11. Using a spatula, turn pancakes over and continue cooking on second side until cooked through, approximately 1 to 2 minutes.

12. Repeat with remaining batter. Wash hands after handling raw batter.

13. Serve pancakes with prepared syrup.
