5 tsp. Big Y taco seasoning mix
2 cups SuperBird rotisserie chicken, shredded
-- no-stick cooking spray
15-oz. can Big Y black beans, rinsed and drained
1 jalapeño, seeded and membranes removed and chopped
1½ cups grape tomatoes, quartered
1 cup yellow bell pepper, sliced
½ small red onion, chopped
1 bag baked tortilla chips
1½ cups reduced fat shredded cheddar cheese
- guacamole and Big Y sour cream
DIRECTIONS
Wash hands with soap and water.
Rinse all fresh produce items under cold running water.
In a small bowl, combine taco seasoning and chicken; toss to coat well.
Coat a large skillet with cooking spray and place over medium heat. Add chicken and cook for 5 minutes or until heated through; remove from the stove and place in a large bowl. Add black beans, jalapeƱo, tomatoes, bell pepper and red onion and mix to combine.
Place chips on a large serving tray and top with chicken mixture. Top with shredded cheese and serve with guacamole and sour cream.
