2 Tbsp. Big Y pure olive oil

1½ lb. ground turkey

1 small yellow onion, diced

2 garlic cloves, minced

1 medium red bell pepper, seeded and chopped

1 cup canned corn, drained

1 tsp. ground cumin

-fresh ground pepper to taste

2 cups less sodium beef broth

1 cups tomato sauce

1 cup Big Y salsa

3 Tbsp. Big Y taco seasoning

¼ cup Big Y ketchup

6 hamburger rolls

-prepared coleslaw

-shredded jalapeño cheddar cheese

DIRECTIONS

1. In a large skillet over medium heat, add oil. Once hot, add turkey, onion, garlic and bell pepper and cook, breaking up meat with a wooden spoon, for 6 minutes or until meat is cooked through. 2. Add corn, cumin, pepper, beef broth, tomato sauce, salsa, taco seasoning and ketchup. Cook for 6 minutes. 3. Serve on rolls with coleslaw and cheese.
