1. Wash hands with soap and water.

2. Rinse fresh produce. 

3. Prepare homemade Thousand Island Dressing by combining all dressing ingredients in a small bowl or jar with a tight-fitting lid. Stir or shake well and refrigerate until ready to use. If desired, store-bought Thousand Island Dressing can be substituted for homemade.

4. Cut each block of tempeh lengthwise into 3 equal pieces. Slice each of these smaller blocks down the middle to yield 2 thin slices each.

5. In a heavy skillet over medium-high heat, add 1 tablespoon oil.  Add onions and tempeh slices, saute until onions are tender and tempeh is golden brown on both sides, about 5 minutes. Remove and set aside.

6. To assemble sandwiches layer slice of rye bread with 1 slice of Swiss cheese, 2 slices of tempeh, 1/3 sauted onions, and 2 to 4 tablespoons sauerkraut. Spread 1 tablespoon Thousand Island dressing on top slice of rye bread and top off sandwich with the dressing against the sauerkraut.

7. In same heavy skillet, heat 1 teaspoon of oil. Grill each sandwich until bread is golden, about 3 to 5 minutes per side.

8. Slice sandwich in half and serve with additional sauerkraut and Thousand Island dressing if desired.
