A savory bean salad with a bright-minty vinaigrette.

Directions
1. Wash hands with soap and water.
2. Rinse fresh produce.
3. In a small bowl, whisk together oil, vinegar, mint, shallots and salt and pepper to taste; set aside.
4. In a large serving bowl, combine beans, celery, cheese and olives. Add oil mixture and gently toss to coat well.
5. Cover and refrigerate for 30 minutes to allow flavor to blend. Serve garnished with additional mint leaves if desired.
