1. Wash hands with soap and water.
2. Rinse fresh produce.
3. In a large skillet over medium heat, add oil and butter. Once butter has melted, add onion and sauté for 5 minutes or until softened.
4. Add turkey, stuffing and green beans and cook for 3 minutes, or until leftovers have reached an internal temperature of 165 degrees Fahrenheit as verified by an instant-read food thermometer.
5. Evenly divide turkey mixture between the lettuce leaves. Top each with a heaping tablespoon of cranberry sauce and a scant teaspoon of pine nuts; season to taste with salt and pepper.
