1. In a shaker jar with a tight-fitting lid, combine oil, vinegar and salt and pepper to taste; seal and shake to combine. Store in the refrigerator until ready to use.
2. In a large bowl, combine salad greens, strawberries and cheese; set aside.
3. Spray grill grate with cooking spray and preheat to medium.
4. Season both sides of chicken breasts with salt and pepper to taste and place on grill. Cover and grill for 6 to 8 minutes. Turn, cover and grill for another 6 to 8 minutes or until chicken is no longer pink inside and juices run clear; remove from grill and let cool slightly. 5. 5. Once chicken has cooled, roughly chop. Divide salad green mixture between four bowls. Top each with some chicken, pine nuts and a drizzling of vinegar and oil mixture and serve.
