Spinach & Cheese Sweet Potato Bread
DirectionsNote: Wash hands with soap and water.
1. Preheat oven to 350 degrees Fahrenheit. Generously coat bottom and sides of a 9x5-inch loaf pan with cooking spray; set aside.
2. In a large bowl, combine baking mix, sweet potato, soup, olive oil, eggs, Italian seasoning, garlic powder, onion powder and salt and pepper to taste; stir with spoon for 1 minute. Stir in spinach and pour into pan.
3. Bake for 45 minutes or until a toothpick inserted in the center comes out clean; let cool for 20 minutes. Remove from pan and let cool completely on a cooling rack.
