1. Preheat oven to 375 degrees F. Add potatoes, corn and garlic to a large bowl. Add half of the olive oil and Creole or Lemon Pepper Seasoning. Toss to combine. Spread evenly onto a baking sheet and bake for 25 minutes.
2. Meanwhile, in the same bowl toss to combine sausage, shrimp, and remaining olive oil and lemon pepper seasoning. Set aside.
3. Remove potato mixture from the oven and arrange shrimp mixture on top. Be sure to evenly spread the meats over the potatoes. Bake for 15-20 minutes, until shrimp is cooked through.
4. Remove from oven. Top with fresh lemon juice and chopped parsley. Serve hot, garnished with a lemon wedge.
