1. In a medium bowl, combine tomatoes, onion, cilantro and 2 teaspoons lime juice, mix to combine. Cover and refrigerate for at least 30 minutes before serving.
2. In another medium bowl, combine shredded chicken, 1/4 cup lime juice, soy sauce and cumin, toss to combine.
3. Place tortilla chips on a large serving plate and, using a slotted spoon, top with shredded chicken.
4. Add half the tomato mixture, cheese and jalapeños. Serve with additional lime juice and tomato mixture if desired.
