Directions1. Preheat oven to 375 degrees Fahrenheit. Spray a medium casserole dish with cooking spray; set aside.
2. Wash hands with soap and water.
3. Rinse all fresh produce items under cold running water prior to prepping.
4. Spray a small skillet with cooking spray. Add onion and garlic and cook over medium heat for 5 minutes or until tender; place in a large bowl. Add lemon juice, oregano, basil, pepper, ricotta, Parmesan, egg, tomatoes and zucchini; mix well.
5. Add cooked pasta and toss to coat. Place mixture into prepared casserole dish and top with mozzarella cheese. Cover with foil and bake for 35 minutes. Remove foil and bake for an additional 10 minutes. Let stand for 10 minutes before serving.
