Note: Wash hands with soap and water.
1. In a large stockpot over medium heat, add olive oil.
2. Add beef, leek, onion and garlic and cook for 8 minutes or until browned.
3. Add remaining ingredients and bring to a boil, reduce heat and simmer for 20 to 25 minutes or until the pasta and vegetables are cooked through.
4. Serve topped with your favorite shredded cheese if desired.
