- Wash hands with soap and water.
- Cut cantaloupe in half and scoop out the seeds. Remove cut into 12 wedges and remove the rind.
- Place 3 melon wedges on each of 4 plates and evenly top each plate with prosciutto mozzarella balls. Garnish with mint leaves.
- In a small bowl, whisk together olive oil, honey, vinegar, salt and pepper. Drizzle over each salad and serve.
