Prep Time: 30 minutes
1. Wash hands with soap and water.
2. Rinse fresh produce.
3. In a medium bowl, whisk together zests, lime juices, oil, vinegar, ginger, garlic, chili pepper and salt and set aside.
4. Place mango strips in a large bowl and add chicken, cucumber, bell peppers and green onion. Add dressing mixture and toss to coat well.
5. Divide lettuce between 4 bowls and evenly top with chicken and vegetable mixture. Garnish with crispy rice noodles, if desired, and serve.
