1. Wash hands with soap and water.

2. Preheat oven to 325 degrees Fahrenheit. In a medium bowl, sift together flour, salt, baking powder, cinnamon, baking soda, nutmeg and ginger. Wash hands after handling raw flour.

3. In a large bowl using an electric mixer on medium speed, beat eggs. Wash hands after handling raw eggs.

4. Gradually add sugar and beat until mixed well. Beat in oil, honey and coffee. Stir in flour mixture.

5. Coat two 9-inch loaf pans with cooking spray.

6. Evenly divide batter between pans and bake for 50-60 minutes or until a toothpick inserted into center comes out clean. Cool on rack before removing from pan.
