1. Wash hands with soap and water.
2. Rinse fresh produce.
3. Coat grill grate with cooking spray and preheat to medium.
4. Sprinkle cut side of peaches with sugar. Place on grill, cut-side-up, and grill for 3 minutes. Turn peaches over and grill until softened, about 3 minutes. Remove from grill and slice.
5. In a small bowl, whisk together honey and lime juice. Pour over peaches, add mint leaves and serve.
