Directions
1. Wash hands with soap and water.
2. Rinse fresh produce.
3. In a small bowl, combine butter, herbs and garlic. Mix well.
4. Lay sheet of plastic wrap on counter and spoon the butter mixture into the center. Roll and shape butter into a log. Refrigerate for 30 minutes or until firm.
5. Drizzle both sides of each steak lightly with some oil and season generously with steak seasoning and pepper, pressing to adhere to the meat. Wash hands after handling raw beef.
6. Coat grill grate with cooking spray and preheat grill to high. Add steaks and grill for 2 minutes per side.
7. Reduce heat to medium and continue grilling until internal temperature of steak reaches 145 degrees Fahrenheit as verified with an instant-read food thermometer, about 5 minutes per side.
8. Remove from grill and let rest for 5 minutes.
9. In a large skillet over medium-low heat, add 1 tablespoon herb butter. Once melted, remove from heat and stir in 2 cups arugula. Place in a large bowl and add remaining arugula and pepper to taste.
10. Serve with steaks and additional herbed butter if desired.
