1. Wash hands with soap and water.
2. Rinse all fresh produce items under cold running water prior to prepping.
3. Mix together spinach, mint, scallion, garlic, yogurt and olive oil and season with salt and pepper to taste.
4. Pour melted butter over and sprinkle dried oregano over the top.
