1. Wash hands with soap and water.
2. Rinse fresh produce.
3. Add olive oil, two tablespoons parsley, lemon juice, and garlic salt to potatoes and toss to combine.
4. Roast potatoes at 400 degrees Fahrenheit for 25 minutes in the oven.
5. Transfer to a serving dish and sprinkle with the remaining parsley and a pinch of garlic salt to garnish.
