Crustless Veggie Quiche
Directions1. Preheat oven to 350 degrees Fahrenheit.
2. Wash hands with soap and water.
3. Rinse all fresh produce items under cold running water prior to prepping.
4. Place a small skillet over medium heat; add oil. Once hot, add onion and cook for 5 minutes or until tender, stirring occasionally. Add broccoli and red pepper and stir to combine. Spoon into a 9-inch pie pan sprayed with cooking spray; add tomato.
5. In a medium bowl, mix remaining ingredients together until well combined; pour over vegetables in pie pan. Bake for 45-50 minutes or until center is set and top is lightly browned.
