Crustless Veggie Quiche

A low carb, protein rich breakfast option.

Recipe by:



1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Preheat oven to 350 degrees Fahrenheit.

4. Place a small skillet over medium heat; add oil. Once hot, add onion and cook for 5 minutes or until tender, stirring occasionally. Add broccoli and red pepper and stir to combine. Spoon into a 9-inch pie pan sprayed with cooking spray; add tomato.

5. In a medium bowl, mix remaining ingredients together until well combined; pour over vegetables in pie pan. Wash hands after handling raw eggs. Bake for 45-50 minutes or until center is set and top is lightly browned.
