Bacon, Spinach, Cheese & Tomato Hand Pies

Note: Wash hands with soap and water.
1. Preheat oven to 375 degrees Fahrenheit. Line a large cookie sheet with foil; coat with cooking spray and set aside.
2. In a large skillet over medium heat, add oil. Once hot, add bacon, leeks and garlic and cook for 5 minutes or until bacon is just cooked. Add spinach and cook for 1-2 minutes or until just wilted; remove from heat and let cool slightly. Once cool, drain well and stir in tomatoes, cheddar cheese, ricotta cheese and salt and pepper to taste; set aside.
3. Unroll dough on lightly floured work surface; cut 3 rounds from each; save scraps for another use. Lightly brush dough rounds with egg.
4. Evenly spoon mixture onto half of each round. Fold other half over filling; press edges with fingers or fork to seal. Lightly brush tops with egg. Bake for 10-15 minutes or until golden brown. Serve warm.
