1. Wash hands with soap and water.

2. Rinse fresh produce.

3. Prepare coffee with water as label directs; cool completely.

4. In a food processor, purée ricotta, liqueur and coffee until smooth. In a large bowl, with a mixer on medium-high speed, beat cream and sugar 3 minutes or until stiff peaks form; fold in ricotta mixture.

5. Divide mousse into 6, 8-ounce glasses; cover and refrigerate at least 1 hour or up to 2 days.

6. Serve mousse garnished with raspberries, chocolate chips and/or almonds, if desired.
