-Big Y no-stick cooking spray

3 cups baking mix (such as Bisquick®)

1 cup cooked and mashed sweet potato, cooled

10.75-oz. can condensed cheddar cheese soup

3 Tbsp. Big Y pure olive oil

2 big Y Large White Eggs

1½ tsp. Italian seasoning

1 tsp. Big Y garlic powder

½ tsp. onion powder

-sea salt and fresh ground pepper, to taste

2 oz. Big Y fresh baby spinach, chopped


1. Preheat oven to 350°F. Generously coat bottom and sides of a 9x5-inch loaf pan with cooking spray; set aside. 2. In a large bowl, combine baking mix, sweet potato, soup, olive oil, eggs, Italian seasoning, garlic powder, onion powder and salt and pepper to taste; stir with spoon for 1 minute. Stir in spinach and pour into pan. 3. Bake for 45 minutes or until a toothpick inserted in the center comes out clean; let cool for 20 minutes. Remove from pan and let cool completely on a cooling rack.
