Add All Ingredients

1 medium white onion, chopped

1 large red bell pepper, seeded and chopped

4 garlic cloves, minced

3-3½ lb. Big Y All Natural Angus Beef boneless chuck roast

1-2 dashes liquid smoke

2 tsp. dried oregano

1½ tsp. Big Y chili powder

1½ tsp. ground cumin

1 tsp. Big Y paprika

½ tsp. cayenne pepper

½ tsp. sea salt

1/8 tsp ground cloves

1 14.5-oz. can fire-roasted diced tomatoes, undrained

14.5-oz. can fire-roasted diced tomatoes

2 bay leaves

3-4 red chili peppers, sliced

4 cups cooked white rice

1/3 cup green olives with pimentos, sliced


1. Place onion, bell pepper and garlic in the bottom of a slow cooker; top with beef and add liquid smoke. 2. In a small bowl, combine oregano, chili powder, cumin, paprika, cayenne pepper, sea salt and cloves and sprinkle over beef roast. 3. Add tomatoes and bay leaves, cover and cook on low for 7-8 hours or until meat is tender. 4. Remove lid, discard bay leaves and carefully shred beef using two forks. Add chili peppers, cover and cook for 1 hour. 5. Serve over rice, garnished with olives.
