8-oz. pkg. Big Y light cream cheese, softened

2 tsp. fresh parsley leaves, minced

1 tsp. fresh basil leaves, minced

1 tsp. fresh oregano, minced

1 garlic clove, minced

24 French baguette slices

1 English cucumber, cut in half

-fresh ground pepper, to taste

DIRECTIONS

1. In a medium bowl, combine cream cheese, herbs and garlic; set aside. 2. Heat a grill pan over medium-low heat. Add a few slices of bread and cook for 2 minutes. Flip and cook for 2 minutes or until both sides have nice grill marks; set aside to cool. 3. Thinly slice the cucumber, lengthwise, using a mandoline, vegetable peeler or sharp knife. 4. Spread cream cheese mixture over each bread slice. Top with a slice of cucumber and season to taste with pepper. Garnish with additional basil leaves if desired.
