1. Wash hands with soap and water.

2. Rinse fresh produce.

3. In a large resealable plastic bag, combine flour, Greek seasoning and pepper to taste. Add pork, seal and shake to coat. Wash hands after handling raw pork.

4. In a large soup pot over medium heat, add 2 tablespoons oil. Once hot, add pork and cook for 5 minutes, stirring frequently, or until lightly browned; remove from pot with a slotted spoon and set aside.

5. Add butter, remaining oil, onion, garlic, celery and mushrooms to the pot and cook over medium heat for 5 minutes or until mushrooms are softened; add pork and cook for 2 minutes. Add chicken broth, cream, herbs and salt and pepper to taste. Cover, reduce heat and simmer for 30 minutes or until pork is tender and reaches an internal temperature of 145 degrees Fahrenheit as verified with an instant-read food thermometer.

6. Serve garnished with additional parsley if desired.
