Crispy-sweet tender chicken strips with a spicy-sweet Thai chili sauce.

Directions

1. Wash hands with soap and water.

2. Preheat oven to 400 degrees Fahrenheit. Coat a large baking sheet with cooking spray; set aside.

3. Sprinkle chicken with salt and pepper. Place flour in a shallow dish.

4. In a second shallow dish, combine buttermilk and egg.

5. In a third shallow dish, combine coconut and bread crumbs.

6. Dredge chicken in flour; shake off excess. Dip chicken in egg mixture and let excess drip off. Dredge in coconut mixture, covering strips well; place on prepared baking sheet.

6. Lightly spray tops of the chicken with cooking spray. Bake chicken until coating is golden brown and an internal temperature is at least 165 degrees Fahrenheit as verified with an instant-read food thermometer, about 20 minutes. Serve with chili sauce.
