-Big Y no-stick cooking spray

3 skinless, boneless chicken breasts, cut into ½-inch-thick strips

-sea salt and fresh ground pepper, to taste

1 cup coconut flour

1½ cups whole buttermilk

1 Big Y large white egg

2 cups unsweetened flaked coconut, finely chopped

1 cup plain panko breadcrumbs

1. Preheat oven to 400°F. Coat a large baking sheet with cooking spray; set aside. 2. Sprinkle chicken with salt and pepper. Place flour in a shallow dish. Combine buttermilk and egg in another shallow dish. Combine coconut and breadcrumbs in a third shallow dish. Dredge chicken in flour; shake off excess. Dip chicken in egg mixture and let excess drip off. Dredge in coconut mixture, covering strips well; place on prepared baking sheet. 3. Lightly spray tops of the chicken with cooking spray. Bake for 20 minutes or until chicken is cooked through and coating is golden brown. Serve with chili sauce.
