Mussels in Tomato Garlic Sauce

1. Wash hands with soap and water.

2. Rinse fresh produce.

3. In a large saucepan over medium heat, add oil. Once hot add garlic and cook, stirring occasionally, for 3 minutes or until golden and slightly crisp; transfer, using a slotted spoon, to a small bowl.

4. Increase heat to medium-high and add tomatoes with juice and wine. Stir in fennel seeds, cayenne pepper and salt to taste.

5. Add mussels, cover, and cook, shaking pan occasionally, for 6 minutes or until mussels open (discard any mussels that don’t open). Using a slotted spoon, transfer mussels to shallow bowls.

6. Add butter to tomato mixture and stir until melted and incorporated. Taste and adjust seasoning.

7. Ladle tomato mixture over mussels and top with chives and fried garlic. Serve with grilled bread.
