½ cup fresh lime juice

½ cup fresh orange juice

4 tsp. fresh jalapeño pepper, seeded and minced

2 Tbsp. fresh cilantro, minced

-sea salt and fresh ground pepper to taste

½ cup Big Y pure olive oil

4 cups cooked spaghetti noodles, cooled

2 cups SuperBird rotisserie chicken, roughly shredded

1 red bell pepper, chopped

2 cups ripe mango, peeled and chopped

2 cups watercress

¼ cup sunflower seeds

¼ cup peanuts, chopped

DIRECTIONS

1. In a small bowl, whisk together fruit juices, jalapeƱo, cilantro and salt and pepper to taste. Slowly whisk in oil; set aside. 2. In a large bowl, add noodles, chicken, bell pepper, mango and watercress; add half of the juice mixture and toss to coat well. 3. Top with sunflower seeds and peanuts and serve with remaining juice mixture.
